    芋头含有糖类、膳食纤维、维他命C、维他命B群、钾、钙、锌等,常吃能增强人体的免疫功能。中医认为芋头有开胃生津、消炎镇痛、补气益肾等功效,可治胃痛、痢疾、慢性肾炎等。不过记得芋头烹调时一定要煮熟,否则其中的黏液会刺激咽喉。此外,芋头忌与香蕉同食,同食会腹胀。

    Step 1

    先将芋头大火蒸15分钟至软,备用。Steam yam over high heat for 15 minutes or till soft. Set aside.

    Step 2

    热锅,中火加热1汤匙油,爆香1汤匙蒜米,加入腊肠炒出香气,盛起放一旁备用。Heat 1 tbsp oil over medium heat. Fry 1 tbsp garlic till fragrant. Add Chinese sausages and fry till fragrant and slightly transparent. Dish out and set aside.

    Step 3

    加热剩余的油,继续爆香菜脯和剩下的蒜米,加入辣椒酱拌炒均匀。Heat remaining oil and fry remaining garlic with preserved radish till fragrant. Add chili paste and fry for 10 seconds till fragrant.

    Step 4

    转大火,加入芋头和调味料A,快速拌炒均匀。将芋头块推开一边,倒入鸡蛋快速拌炒,加入大头菜、韭菜、胡椒粉和腊肠,将全部材料快速拌炒即可盛碟趁热享用!Increase heat, add steamed yam and Seasoning A. Stir fry quickly to combine well. Push the yam to one side and pour in the eggs. Scramble eggs quickly. Add turnip, chives, pepper and reserved Chinese sausages. Stir fry everything quickly. Dish out and serve hot.

    Step 5

    厨师提示:在最后阶段,应该要转大火快炒以炒出“锅气”。如有需要,可以添加些许油炒蛋。Chef’s Tips: At the last stage of frying, it is important to use high heat to achieve the wok aroma or “wok hei”. You can add more oil for frying the eggs, if you like.
