    Step 1

    将茄子开边,外皮用刀片轻割成格仔式,然后浸泡水15分钟,捞起备用。Halve eggplant vertically, cross cut the skin and then soak in water 15 minutes;drain.

    Step 2

    烧热1饭碗油,半煎炸至茄子软身和熟透起镬,放在吸油纸吸去多余油,上碟备用。Heat 1 bowl of oil in wok,sear eggplant until soften and cooked;dish out and drain on top of paper towel to absorb the oil and place in serving plate.

    Step 3

    烧汁做法: 烧热油,加入糖烧至金黄色,加入所有味料炒香,加入水煮至浓稠即可淋在茄子上。放上装饰。For sauce: Heat oil in wok, add in sugar and sauté until caramelized,toss in all sauce ingredients until fragrant;pour in water and cook until gravy thicken;dish out and pour over eggplant, serve with garnishing.
