    心得交流站 :预先以热油拉牛肉可保持肉质鲜嫩;苦瓜必须先以盐搓洗10-20秒钟以去苦味。

    Step 1

    用腌料腌牛肉。Season beef with marinade and put aside.

    Step 2

    用热油泡苦瓜数秒钟后盛出,牛肉也拉一拉油后盛出。Scald bitter gourd pieces in hot oil over high heat for a few seconds then dish out. Add in marinated beef and scald briefly. Remove and put aside.

    Step 3

    另外起锅热油,把姜和蒜头爆香。Heat oil in a wok and saute ginger and garlic over low heat until aromatic.

    Step 4

    加入苦瓜和酱汁材料,焖煮10分钟。Add bitter gourd and sauce ingredients. Simmer for about 10 minutes.

    Step 5

    加入牛肉和辣椒干,大火炒均后赞入花雕酒即可盛出。Put in beef fillet and dried chilies. Fry briskly over high heat. Sprinkle in Shao Hsing wine to sizzle. Dish out immediately.
