生炒糯米饭是以生糯米、广式腊肠、虾米等食材制成的一道美食,此饭补中益气,助消化,治疗妇女产后贫血,尤其适于产后调理滋补,同时也是粤菜中的一道有名的美食。

    Step 1

    炒锅预热,加入1汤匙油加入预先炒好的腊肠、香菇、虾米。Heat 1 tbsp oil in wok, fry sausages, mushrooms, shrimps.

    Step 2

    加入葱花和葱头仔拌炒,再加入McCormick蒜香粉和白胡椒粉各1小条,搅拌均匀。Add in the spring onion and shallots. Add in 1 Stick of McCormick Garlic Granulated Singles & 1 Stick of McCormick White Pepper Ground Singles, stir evenly.

    Step 3

    加入糯米饭后轻轻翻炒均匀,直到听到丝丝声,意味着水份越来越少,现在开始一次加入1汤匙虾米水,继续轻轻搅拌。3-5分钟后再次加入1汤匙虾米水/瑶柱水后炒匀,重复以上动作炒足15分钟。Add in glutinous rice, stir fry gently and evenly until can hear sizzling sound which means water is getting lesser and then start to add in shrimp water 1 tbsp at a time. Continue to stir the rice and ingredient gently in the hot wok. Add in another 1tbsp of shrimp/scallops water after 3-5 minutes, repeat this step up to 15 minutes.

    Step 4

    再次加入虾米水,盖上锅盖蒸2-3分钟。之后打开锅盖,再加水,重复整个过程至30分钟。Lastly add in shrimp water again and close the lid to steam the rice for 2-3 minutes. Open lid add water again, and repeat whole process until 30 minutes.

    Step 5

    加入调味料后拌炒均匀,盖上锅盖焖3-5分钟。Finally add in gravy (which is already mixed well) gradually and stir fry then close lid again for 3-5 minutes.

    Step 6

    打开盖子,再次拌炒,此时糯米饭已完全煮熟变软。总烹饪时间约35-40分钟。Open lid , stir fry and the rice should be fully cooked and soften. Total cook time is around 35-40 minutes.

    Step 7

    盛饭上碟,加入鸡蛋丝、炸过的花生和葱粒后即可趁热享用。Serve the rice in bowl, garnish with shredded egg on top, sprinkle fried peanuts and spring onions; enjoy.
