    心得交流站 : 卤豆腐不要盖着煮,豆腐会变老。

    Step 1

    炸豆腐飞水备用。Blanch deep fried tofu in boiling water and drain.

    Step 2

    烧热材料B的油,加入糖和南姜,大火烧至糖金黄色,加入卤汁材料A及B,慢火煮20分钟成卤汁,加入豆腐小火煮20分钟。加入白玉菇煮片刻,即可上碟。炒熟豆苗围边。Heat ingredients B,add in sugar and galangal;once caramelized,add in all stew sauce ingredients and cook in low heat for 20 minutes;toss in tofu and simmer in low heat for 20 minutes,lastly add in mushroom and continue to cook briefly, dish out and garnish with fried pea sprouts.
