白酒青口 Chickpeas & Meat Stew

【材料】4人份
240克青口、白酒300毫升、小葱头80克(剁细)、无盐牛油30克、洋莞荽2束(剁碎)、西芹50克(剁碎)、柠檬汁10毫升、冷冻牛油块50克(切丁)、盐和胡椒粉适量
【做法】
1.把青口冲洗干净后滴干。
2.镬内热无盐牛油,爆香小葱头。
3.加入青口拌炒,然后加入白酒,煮数分钟至青口熟透。(图1-2)
4.以盐和胡椒粉调味。
5.熄火,把冷冻牛油和柠檬汁拌入。
6.撒上洋莞荽即可。(图3)

【Ingredients】
240g blue mussel, 300ml white wine, 80g shallot (chopped), 30g unsalted butter, 2 sprig English parsley(chopped), 50g celery (chopped), 10ml lemon
juice, 50g chilled butter(cubes), Salt and pepper to taste
【Method】
1.Rinse mussel and drain dry
2.Sautéed shallot and celery with unsalted butter in a large sauce pan.
3.Stir in mussel; add in white wine, cooked for a few minutes until mussel is cooked.(pic 1-3)
4.Season to taste with salt and pepper.
5.Removed from fire and whisked in chilled butter and lemon juice.
6.Garnish with chopped parsley.(pic 3)
