    【烹饪小贴士】 山苦瓜片要酥脆耐久,回镬再炸一次。

    Step 1

    将马铃薯刨丝后,浸泡冷水30分钟,滤干水份,烧热油炸至酥脆备用。Peel potato and then juliennes,soak in cold water for 30 minutes,drain and then deep fry until crispy.

    Step 2

    把椒盐材料以白镬炒香成椒盐。Pan-fry pepper-salt ingredients until well mixed.

    Step 3

    山苦瓜切薄片,冲洗后,拌入适量炸脆粉,待10分钟后,每片再沾上适量炸脆粉,放入油镬炸至酥脆,备用。Slice bitter gourd thinly,wash and then coat with batter,let rest for 10 minutes,coat with batter again and deep fry until crispy.

    Step 4

    烧热½大匙油,炒干椒盐材料,加入炸脆马铃薯和山苦瓜,快手炒匀上碟,趁热享用。Heat ½tbsp oil in wok,add in all pepper-salt ingredients,follow with potato and bitter gourd,stir-fry briskly and dish out.
