粉丝炒啦啦Stir-fried Clams with Glass Noodles

【材料】
蚬300克、冬粉150克(泡软)、姜茸1汤匙、蒜茸1汤匙、小辣椒茸半汤匙、青葱2根(切细)、高汤1碗
【调味料】
豆瓣酱半汤匙、盐1⁄2茶匙、糖1茶匙、花雕酒2汤匙(随意)
【做法】
1. 将啦啦泡盐水吐污泥,洗净沥干水份备用。(图1)
2. 将冬粉放入沸水中烫熟,捞出沥干水,摆在盘里。(图2)
3. 烧热油锅;将姜,葱,小辣椒和豆酱以小火爆香。(图3-4)
4. 倒入啦啦调大火爆炒,加入高汤煮滚至啦啦开口为止。(图5)
5. 加入剩余调味料煮均匀即可熄火盛上碟子伴着烫熟粉丝享用。(图6-7)

【Ingredients】
300g clams, 150g glass noodles (soaked), 1 tbsp chopped ginger, 1 tbsp chopped garlic, 1⁄2 tbsp
chopped chili padi, 1 bowl stock
【Seasonings】
1⁄2 tbsp soy bean paste, 1⁄2 tsp salt, 1 tsp sugar, 2 tbsp Shao Hsing Chinese Wine (optional)
【Method】
1. Clean and soak clams in salt water to remove dirt and sand, rinse well and drain. (pic 1)
2. Blanch soaked glass noodles in boiling water till cooked, drain and place on serving plate. (pic2)
3. Heat oil in wok, sauté ginger, spring onion, chili padi and soy bean paste until fragrant. (pic 3-4)
4. Toss in clams and stir-fry with high heat, pour in chicken stock, boil till clams open their shells.(pic 5)
5. Add in other seosonings, mix well and dish out, serve with scudded glass noodles.(pic 6-7)
