素虾面 Vegetarian Prawn Mee

【材料】
黄面1碗、米粉1⁄2碗、豆芽300克、鸡腿菇2颗(切片)、空心菜1束
【汤底料】
A:紫菜1片(预先浸泡)、榨菜2片、清水3碗
B:素马来盏1汤匙、辣椒泥1⁄2碗
【调味料】
适量盐
【汤底做法】
1. 将浸软的紫菜和榨菜放入搅拌机内加水搅拌至细。(图1)
2. 镬内热少许油先爆香素马来盏,加入辣椒泥同炒至香,捞起备用。(图2-3)
3. 把紫菜汤煮滚,加入炒好的马来盏辣椒酱熬煮成素虾汤底,加适量盐调味。
【做法】
1. 另烧开热水,分别烫熟面条和所有配菜备用。
2. 将面放入碗,然后顺序把鸡腿菇、空心菜和豆芽铺面,淋入素虾汤即可。(图4)

【Ingredients】
1 bowl yellow noodle, 1⁄2 bowl Mee Hoon, 300g bean sprout, 2 drumstick mushroom (sliced), 1 stalk Kangkong
【Vegetarian stock Ingredients】
A:1 piece seaweed(soaked), 2 slice zha cai, 3 bowls water
B:1 tbsp vegetarian Balacan paste, 1⁄2 bowl chili boh
【Seasoning】
some salt to taste
【Method for stock】
1. Blend seaweed and zha cai with water till fine, set aside.(pic 1)
2. Sauté vegetarian balacan and chilli boh until fragrant.(pic 2-3)
3. Boil seaweed stock in a pot, pour in sautéd balacan chili and cook as vegetarian prawn soup, season to taste.
【Method】
1. Scud noodles and all sub ingredients in boiling water.
2. Place noodles in a bowl, top with drum stick mushroom, Kangkong and bean sprout,
pour in the vegetarian prawn stock, serve hot.(pic 4)
