素鱼排螺丝意面

素鱼材料
马铃薯150克(蒸熟压成泥)、素火腿30克(切碎)、西洋芫茜1汤匙(切碎)、鲍茹菇3-4块、面包糠(黄色)1⁄2杯

150g potato(steamed and mashed), 30g mock ham (chopped), 1 tbsp parsley (chopped), 3-4 pcs abalone mushroom, 1⁄2 cup bread crumb

调味料
A:盐1⁄2小匙、胡椒粉1⁄4小匙
B:番茄酱2大匙、黑胡椒1⁄2小匙、盐1⁄2小匙

A:1⁄2 tsp salt, 1⁄4 tsp pepper
B:2 tbsp tomato sauce, 1⁄2 tsp each of salt and pepper

香茅蜜汁酱材料:混合
香茅头3支(刨碎)、酸柑汁1汤匙、蜂蜜1汤匙、生抽1汤匙、热水2汤匙、橄榄油1汤匙、黑白芝麻1小匙

3 stalks lemon grass (grind), 1 tbsp lime juice, 1 tbsp honey, 1 tbsp soy sauce, 2 tbsp hot water, 1 tbsp olive oil, 1 tsp sesame oil

装饰
青芦荀4支、樱桃茄5粒

4 stalks asparagus, 5 cherry tomato

螺丝意面材料
螺丝意面100克、鸿禧菇50克、红、黄灯笼椒各30克(切粒)、西洋芫茜1汤匙(切碎)

100g Spiral pasta, 50g Enokitake mushroom, 30g each of red & yellow capsicum (diced), 1 tbsp chopped parsley

做法
1.将马铃薯泥拌入素火腿碎、西洋芫茜碎及调味料A拌匀,揉成3个圆球,压扁,包上鲍茹菇。(图1)
2.沾裹面包糠,烧热油,放入马铃薯素鱼煎至金黄色冒香即可,盛起沥油待用。(图2)

1.Mixed mashed potatoes with mock ham, parsley and seasoning A; and then make into 3 balls, flatten and wrap each with abalone mushroom. (pic 1)
2.Coat mocked fish fillet with bread crumb and deep fry in hot oil until golden brown, drain. (pic 2)

螺丝意面做法
1.烧沸一小镬水和少许油,加入螺丝意面烫熟,捞起沥水。
2.镬里烧热少许油,先炒香红、黄灯笼椒和鸿禧菇,加入螺丝意面及调味料B炒匀即可上碟,排放素鱼块。(图3-4)
3.把青芦荀烫熟和樱桃茄排放素鱼上,淋上香茅蜜汁酱。

1.Boil water in pot with some oil, scud spiral pasta until cooked, drain.
2.Heat some oil in wok, sauté capsicums and mushroom until fragrant, toss in spiral pasta and seasoning B, dish on plate and top with mock fish fillet.(pic 3-4)
3.Blanch asparagus and cherry tomato and arrange on dish, sprinkle lemon grass honey sauce over and serve.
