翡翠鲜虾卷之樱花彩虹鸡Jade Shrimp Roll with Cherry Blossoms Rainbow Chicken

翡翠鲜虾卷
材料A:
500 克 虾泥
150 克 菠菜泥
适量 发菜
7 片 日本腐皮
7 粒 蚝豉
适量 红鱼籽

 

调味料A:
2 茶匙 MAGGI® 鲜汤
1/2 茶匙 MAGGI® 鸡精粉
300 克 红萝卜鸡高汤
适量 盐
适量 糖

斐翠鲜虾卷做法:
1. 将虾泥加入菠菜泥及发菜拌匀,再调入腌味料拌成翡翠虾胶。
2. 接著,将每个日本腐皮包入翡翠虾胶及1粒蚝豉,再送入蒸炉蒸5分钟至熟。
3. 调味料放入锅中煮滚,勾芡后淋在蒸熟的虾卷上,放上红鱼籽即可。

樱花彩虹鸡

材料B:
300 克 鸡腿肉
50 克 芒果条
50 克 苹果条
50 克 蜜瓜条
20 克 柚子肉
3 粒 草莓条
适量 干樱花虾

调味料B:
1/2 汤匙 MAGGI® 蚝油
1 茶匙 MAGGI® 鸡精粉
1 茶匙 MAGGI® 酸柑粉
2 汤匙 糖
2 汤匙 酸梅酱
适量 熟芝麻

樱花彩虹鸡做法:

  1. 首先,将鸡腿肉用腌味料腌制10分钟,蒸熟后切丝备用。
  2. 将调味料B拌匀,再拌入熟鸡丝及所有材料B拌匀即可。

Jade Shrimp Roll
Ingredient A:
500 gm Shrimp paste
150 gm Spinach puree
A handful Black Moss (Fatt Choy)
7 sheets Japanese beancurd skin
7 pcs Dried oyster
A little Red fish roe

Seasoning A:
2 tsp MAGGI® Concentrated Chicken Stock
½ tsp MAGGI® Chicken Stock
300 gm Carrot chicken broth
A pinch Salt
Sugar (to taste)

Preparation method for Jade Shrimp Roll:

1. Mix the shrimp paste with the spinach puree and black moss. Add in the seasoning and mix it to become the Jade Shrimp paste.
2. Next, wrap the Jade Shrimp paste and a piece of dried oyster into every sheet of the bean curd skin. Steam for 5 minutes until well cooked.

3. Bring the seasoning to a boil, thickened it with cornstarch and drizzle over the cooked Jade Shrimp roll. Top it off with red fish roe and serve.

Cherry Blossoms Rainbow Chicken

Ingredient B:
300 gm Chicken thigh
50 gm Mango (strips)
50 gm Apple (strips)
50 gm Honeydew (strips)
20 gm Pomelo flesh
3 whole Strawberries (strips)
A little Dried sakura shrimp

Seasoning B:
½ tbs MAGGI® Oyster Sauce
1 tsp MAGGI® Chicken Stock
1 tsp MAGGI® Lime Seasoning Powder
2 tsp Sugar
2 tsp Sour plum sauce
A pinch Cooked sesame

Preparation method for Cherry Blossoms Rainbow Chicken:

1. Firstly, marinate the chicken thigh for 10 minutes. Steam it until well cooked and shred the meat. Set aside.

2. Combine Seasoning B ingredients, add in shredded chicken and coat evenly. Serve it on top of the fruits and garnish with dried sakura shrimps.
