肉碎油渣拌梅菜 Braised Mui Choy with Minced Meat & Crispy Pork lard

材料 :
梅菜200克、肉碎120克、猪油3汤匙、猪油渣35克、蒜头1粒(拍扁)
调味料:
糖1茶匙、鸡精粉1茶匙、老抽1汤匙、蚝油1茶匙
做法 :
1. 梅菜洗净切粒,浸泡清水½小时揸干,然后以干净镬炒干香备用。(图1-2)
2. 以猪油爆香蒜头,放入肉碎炒至转色。(图3-4)
3. 加入梅菜及注入水刚盖过梅菜,中火焖10分钟。(图5-6)
4. 加入猪油渣及调味料,煮5分钟即可。(图7)

INGREDIENTS :
200g Mui Choy, 120g minced meat, 3 tbsp pork oil, 35g crispy pork lard, 1 whole garlic (smashed)
SEASONING
1 tsp sugar, 1 tsp chicken powder, 1 tbsp dark soy sauce, 1 tsp oyster sauce
METHOD :
1. Wash Mui Choy and chop coarsely; soak in water for ½ hour and then squeeze out water, stir-fry in dry wok until fragrant. (pic 1-2)
2. Sauté garlic with pork oil until fragrant; add in minced meat and sauté until cooked. (pic 3-4)
3. Add in Mui Choy, pour in water enough to cover the Mui Choy; simmer in medium heat for about 10 minutes. (pic 5-6)
4. Add in crispy pork lard and seasoning; cook for another 5 minutes, done. (pic 7)
