简单又美味的胜瓜扒豆腐,大人小孩都会喜爱。胜瓜又名丝瓜,功能清热化痰,凉血解毒。搭配日本豆腐,滑嫩易入口,是一道清淡且营养十足的家常菜。

    Step 1

    胜瓜去皮切约3寸段,去掉芯备用。Skinned & seeded loofah, cut it into about 3-inch sections and set aside.

    Step 2

    豆腐对开切成4段,以热油炸至微黄。Cut the Japanese tofu in section, deep-fry until lightly yellow, set aside.

    Step 3

    锅中留少许油爆香蒜头,加入胜瓜拌炒。Leave some oil in the wok and sauté the garlic until aroma, add the loofah and stir-fry.

    Step 4

    倒入调味料焖煮片刻,加入蛋白后熄火,盛入豆腐中。Pour in the seasoning and simmer for a while, add the egg whites, turn off the heat, and pour into the tofu.

    Step 5

    锅中保留适量胜瓜,利用余温倒入蛋黄拌炒一下,再淋入豆腐上即可。Keep an appropriate amount of loofah in the wok, use the remaining temperature to pour in the egg yolk and stir-fry for a while, then pour it over the tofu, done.
