腰豆要先炸过,炸的方法是一开始就把腰豆放入冷的油里,以小火加热,至到腰豆变金黄色即可捞出。

    Step 1

    把豆腐切8-10片,然后每2片夹1茶匙的乌达乌达,再沾满栗米粉。Cut each bean curd into 8-10 thin slices. Add a tsp of Muar otak in between 2 slices of bean curd. Coat with corn flour.

    Step 2

    用牙签固定酿豆腐入油锅炸至金黄色。Use a wooden toothpick to hold together the bean curd sandwich to prevent them from splitting up. Deep-fry the pieces in hot oil until golden.

    Step 3

    留2汤匙炸油于锅,把辣椒干,姜及蒜茸炒至香。加入指天椒和咖哩叶炒香。Leave 2 tbsp oil in the wok, fry dried chillies, ginger and garlic until fragrant. Stir in chilli padi and curry leaves.

    Step 4

    倒入酱汁材料,煮至滚。Add in sauce ingredients and bring to the boil.

    Step 5

    拌入炸豆腐,青灯笼椒及青葱,炒均后拌入腰豆即可。Add bean curd sandwich, capsicum and spring onion. Toss well to combine. Add in cashew nuts to mix then dish out and serve at once.
