芋头焖生鸡 Braised Chicken with Yam

材料
鸡全腿2只、芋头500克、青葱粒30克、豆酱½汤匙、
葱头茸20克、虾米20克、蒜米20克、高汤200克
调味料
味精1茶匙、盐¼茶匙、糖少许
做法
1 将鸡腿斩块;芋头切成粗条,拉油备用。(图1-2)
2 起锅热油,把蒜米、虾米、葱头茸和豆酱爆香。(图3-4)
3 加入鸡肉翻炒至肉收缩,倒入高汤、芋头和调味料, 用小火焖15分钟至熟(图5-6)
4 最后加入青葱和勾薄芡即可。(图7)

INGREDIENTS
2 chicken whole leg, 500g yam, 30g chopped spring onion, ½ tbsp soy bean paste, 20g
chopped shallot, 20g dried shrimp, 20g chopped
garlic, 200ml broth
SEASONING
1 tsp MSG, ¼ tsp salt, dash of sugar
METHOD
1 Chop chicken whole leg into pieces; cut yam into block and then blanch in hot oil. (pic 1-2)
2 Heat oil in wok, saute garlic, dried shrimp, shallot and soy bean paste until fragrant. (pic 3-4)
3 Add in meat to stir-fry briefly; pour in broth, yam and seasoning, simmer in low heat for 15 minutes. (pic 5-6)
4 Toss in spring onion and thicken with light starch. (pic 7)
