芋香猪手 Braised Trotter with Yam

材料 :
猪前蹄半只(约600g,斩断骨)、毛芋头/小芋头300克(
去皮,切块)、榨菜150克(切片,浸水30分钟)、蒜茸1大
匙 、头仔碎1大匙葱
腌料 :
辣椒酱1大匙、盐½小匙、木薯粉2大匙、油1大匙
调味料 :
辣椒酱3大匙、番茄酱2大匙、蚝油1大匙、糖1小匙、水
200毫升
做法
1. 将猪蹄加入辣椒酱和盐拌匀,加入木薯粉拌匀,最后
加入油拌匀,腌1小时。(图1-2)
2. 将腌好的猪蹄放入滚油里,大火炸香,捞起,放入7寸
的碗里,铺上榨菜。(图3-5)
3. 将芋头炸熟至金黄色,捞起铺在榨菜上。(图6-8)
4. 用1大匙油爆香蒜茸和葱头仔碎,加入调味料煮滚,
淋入扣好材料的碗里,用耐热保鲜纸包好,放入蒸笼
里,炖4个小时至猪蹄软。(图9-10)
5. 取出,扣在碟里,洒上芫茜,即可。

INGREDIENTS :
½ pig trotter (about 600g, chopped), 300g yam
(peel and cut into pieces), 150g spicy pickled
mustard (soak for 30 minutes), 1 tbsp chopped
garlic, 1 tbsp chopped shallot
CONDIMENTS :
1 tbsp chili paste, ½ tsp salt, 2 tbsp tapioca flour,1 tbsp oil
SEASONING :
3 tbsp chili sauce, 2 tbsp tomato sauce, 1 tbsp
oyster sauce, 1 tsp sugar, 200ml water
METHOD :
1. Marinate pig’s trotters with chili paste and salt;
and then mix with tapioca flour and oil, leave
for 1 hour. (Pic 1-2)
2. Put the marinated pig’s trotters into boiling oil,
deep fry until fragrant; dish out and put it in a
7-inch bowl, top with spicy pickled mustard.

3. Deep fry yam until golden brown, dish out and
place on top of spicy pickled. (Pic 6-8)
4. Saute garlic and shallot with 1 tbsp of oil until
fragrant; add in seasonings and bring to boil;
and then dish out and pour into the bowl, wrap
it in heat-resistant cling, put in steamer, stew
for 4 hours until pig trotter is soften. (Pic 9-10)
5. Dislodge the dish on serving plate,garnish with
coriander, done.
