    Step 1

    准备脆片:在烤盘上铺上锡箔纸,喷上一些油。将砂糖放入平底锅中,以小火加热。当糖开始融化时稍微搅拌均匀,加热直到所有的糖都融化成金黄色(约10分钟),需要不时搅拌以防止烧焦。加入南瓜籽与芝麻,快速搅拌并倒入预先准备好的烤盘上。用小刀将焦糖抹成薄薄一层后待完全冷却。最后,小心地剥下锡箔纸并掰成碎片。Prepare brittle : Line a baking tray with foil and lightly spray with some oil. Place sugar in a dry, light coloured sauce pan and heat over low heat. When the sugar starts to melt at the edges, stir it a little to distribute the heat evenly. Heat until all the sugar has melted into a soft light golden colour (about 10 mins), stirring occasionally and watching all the time to prevent burning. Add seeds, stir quickly and pour into prepared pan. Spread the caramel with a knife to get a thin layer. Allow to cool completely. Carefully peel off foil and break into pieces.

    Step 2

    准备库尔菲:将淡奶油倒入平底锅中,以中小火煮沸后转小火煮约15分钟,一直搅拌至份量减半后加入奶酪,煮至浓稠状。Prepare kulfi : Pour evaporated creamer in a sauce pan, bring to the boil over medium low heat, simmer for about 15 mins, stirring all the time until reduced to almost half. Add paneer and simmer till slightly thickened again.

    Step 3

    加入芒果和橙汁搅拌混合,再加入炼乳,以小火搅拌至浓稠。加入橙皮屑后搅拌均匀并离火。Add mangoes and orange juice. Stir to combine. Add condensed milk and stir over low heat till thickened. Add orange rind, stir and remove from heat.

    Step 4

    待稍微冷却后,装入你喜欢的容器中,盖上盖子放入冰箱冷冻一晚。Allow to cool slightly. Transfer to individual serving cups or a larger container. Cover and freeze overnight.

    Step 5

    将库尔菲取出,放上脆片与撒一些橙皮屑即可享用。Serve kulfi with seed brittle and orange rind.
