芝士烟肉蛋 Bake Cheese Egg with Bacon

【材料】
A:鸡蛋4粒、帕美森芝士茸2汤匙、烟肉2片、鲜奶2汤匙
B:剁碎番茄1⁄2杯、剁碎大葱1⁄2杯、青葱粒2汤匙
【调味料】
番茄酱2汤匙、盐、白糖及胡椒粉少许
【装饰】
剁碎鲜迷迭香少许
【做法】
1. 在平底锅内将烟肉煎至香脆,取出剁碎备用。(图1)
2. 在另一个平底锅热油,把大葱和番茄炒至软身后加入烟肉碎、青葱粒及调味料炒均。(图2)
3. 把番茄炒料分成2份,放入直径4寸的耐热碗里,打入2粒鸡蛋,加入1汤匙牛奶,再撒入芝士茸和额外的盐及黑胡椒粉。(图3-5)
4. 放入烤炉以180°C烤15分钟或至表面凝结即可。(图6)
5. 撒入剁碎鲜迷迭香即可上桌。


【Ingredients】
A:4 Eggs, 2 tbsp grated Parmesan cheese, 2 slices bacon, 2 tbsp fresh milk
B:1⁄2 cup chopped tomato, 1⁄2 cup chopped onion, 2 tbsp chopped spring onion
【Seasoning】
2 tbsp tomato sauce, pinch of salt, sugar and pepper
【Garnishing】
Some chopped fresh rosemary
【Method】
1. In a frying pan, seared bacon till crispy. Chopped and set aside.(pic 1)
2. Heat oil in skillet, saute chopped onion and tomato until soften, toss in chopped bacon, spring onion and seasoning, stir to mix, dish out.(pic 2)
3. Divide tomato mixture into 2 portions, fill them in 4 inches heat proof bowl, crack 2 eggs over tomato mixture and then pour in 1 tbsp milk, sprinkle grated cheese on top with some extra salt and crusted black
pepper.(pic 3-5)
4. Bake in 180°C oven for 15 minutes or until surface is set.(pic 6)
5. Sprinkle some chopped fresh rosemary on top and serve.
