    Step 1

    把鲳鱼洗净后切成2块,鱼身表面划刀,然后抹盐。Clean Pomfret well.Cut fish into 2 pieces.Make slight criss-cross cuts on both sides of the fish and lightly rub salt all over the fish.

    Step 2

    起锅热油,把姜丝爆香后盛出。Heat oil in a wok and fry ginger shreds until fragrant and crispy.Dish out.

    用锅内剩余的油把鱼炸至金黄色,然后盛出排碟。Heat oil in a wok and fry ginger shreds until fragrant and crispy.Dish out.

    另外热锅,加入麻油和香菇,炒至香后加入花生和酱汁材料,煮滚后加入金针菇。Heat wok until hot; add sesame oil and mushrooms.Fry for a while then add in peanuts and sauce ingredients. Bring to a boil.Add in enoki mushrooms to mix.

    Step 5

    把材料盛出,淋在鲳鱼上,再撒炸蒜茸即可。Dish out and pour over the fish.Garnish with garlic crisps.
