    Directions

    一锅药膳花胶醉鸡煲,暖胃又滋补。

    Step 1

    预先把红枣、枸杞连同350克双蒸白米酒浸泡隔夜备用。Soak red dates and wolfberry with rice wine overnight.

    Step 2

    菜园鸡以1汤匙绍兴酒、生粉及适量胡椒粉捞匀腌15分钟。Marinate chicken with 1 tbsp shao xin wine, plain flour and some pepper for 15 minutes.

    Step 3

    少许油热锅,爆香姜片,下鸡块炒香,接着放入云耳及淮山拌炒片刻。然后盛入瓦煲中,加入冰糖。Heat some oil in wok, sauté ginger till fragrant. Add in chicken and stir well. Add in fungus and fresh Chinese Yam, stir fry well and transfer to claypot, add rock sugar and continue to cook.

    Step 4

    倒入浸泡的红枣及枸杞酒(1),面上拌入花胶片然后盖上煮滚后,转中火继续煮2-3分钟。Add in red dates and wolfberry wine, top with fish maw and bring to a boil. Turn to medium heat and continue cook for 2-3 minutes.

    Step 5

    开盖调入绍兴酒及盐试味,趁热享用。Open the lid, season with Shao Xin wine and salt, serve hot.
