荷叶富贵鸡芳香扑鼻,板酥肉嫩,风味独特。而且鸡肉中蛋白质的含量比例很高,而且消化率高,很容易被人体吸收利用。
将鸡洗净,抹干水,涂上腌料,腌2小时。Wash the chicken, rub with marinate ingredients for 2 hours.
用2大匙油炒香洋葱、冬菇和瘦肉,加入200毫升水和药材煮滚,煮多5分钟。Heat 2 tbsp oil in wok, saute onion, mushroom and lean meat till fragrant, add in 200ml water and herbs, bring to boil and cook for another 5 minutes.
加入调味料煮滚加入粟粉水打芡成馅料。Toss in seasoning, bring to boil. Thicken with corn starch to become filling.
把馅料塞入鸡肚子里,鸡面再涂抹少许生抽Stuff the chicken with filling. Rub chicken surface with some soy sauce. (pic 3-4)
桌上铺一面锡纸,上面再铺上荷叶,放入鸡包好。Place one piece of aluminium foil paper, top with lotus leaf. Place chicken on top and wrap it.
面团做法:将面粉、水和盐加一起拌匀成团,加入油,搓至幼滑,休息15分钟,擀薄,包好。To prepare dough: Mix flour with water and salt, knead into dough.
放入烤箱,用180°C烤100-120分钟,即可。Wrap the chicken with dough, bake in oven at 180°C for 100-120 minutes, done.
