【烹饪小贴士】菠菜因为要回锅再炒,记得汆烫时不要过熟。

    Directions

    Step 1

    将鹰咀豆加入滚水150毫升,隔水烧1½小时,关火再焗30分钟备用。Double boil chick peas with 150ml boiling water for 1½ hour; and then off heat and simmer for 30 minutes.

    Step 2

    竹笙飞水后切碎粒。Blanch Zhu Shen in boiling water and then chop into small pieces.

    Step 3

    菠菜烫软后过冷水,沥干水份备用。Blanch spinach and rinse with cold water, drain.

    Step 4

    爆香材料C,加入材料B炒匀,再加入菠菜和调味料,快手兜炒即可上碟,配搭馒头享用。Saute ingredients C with oil with fragrant, toss in ingredients B and follow with spinach and seasoning; stir-fry briskly and dish out, serve with Man Tou.
