蒿菜葡汁煎鸡 Pan fried chicken with tarragon grape sauce

材料:

鸡胸肉4副,盐,胡椒粉及菜籽适量

蒿菜葡汁:

无籽红色葡萄20粒,蒿菜2束,褐汤400毫升, 普通面粉40克,奶油60毫升,牛油40克,大葱50克(剁碎),蒜头2瓣(剁碎),无糖葡萄汁250毫升,盐和胡椒粉适量

小米饭:

北非小米100克,清水100毫升,盐适量

做法:

  1. 用盐,胡椒粉及菜籽腌鸡胸肉2-4小时,用少许油煎至金黄色。

酱汁:

  1. 用滚水川烫葡萄1分钟,放入冰水浸泡葡萄,然后去皮。
  2. 热牛油,以中火爆香大葱,蒜头及蒿菜,然后加入面粉炒均。
  3. 加入葡萄汁和褐汤,煮滚后转小火焖煮15分钟。
  4. 加入葡萄,小火煮8-10分钟,以盐和胡椒粉调味,拌入奶油。

小米饭:

  1. 把盐加入水里煮至滚。加入小米,加盖煮至滚。
  2. 熄火,焖15分钟。把米饭弄松即可。

Ingredients:

4 pcs Chicken breast , Salt, pepper to taste, grain mustard

Tarragon grape sauce
20 numbers Red grape, seedless, 2 sprig Fresh tarragon, 400 ml Brown stock,
40 gm flour, 60 ml UHT culinary cream, 40 gm butter, 50 gm Onion(chopped), 2 cloves Garlic(chopped), 250 ml Unsweetened Grape juice, salt & pepper to taste

Couscous
100 gm couscous, 100 ml water, salt to taste

To prepare chicken breast:
1. Marinate chicken breast with salt, pepper and grain mustard for 2-4 hours. Pan fried till golden
To prepare the sauce:
1. Blanch grape in boiling water for 1 minutes, refresh in ice water. Peel off the skin. Keep aside
2. Sauté onion, garlic and tarragon in butter over medium heat. Stir in flour and mix well. Add in grape juice and brown stock. Bring to boil and simmer for 15 minutes.
3. Add in peeled grapes and cook over low heat for 8-10 minutes, correct seasoning with salt and pepper.
4. Whisk in culinary cream before served.
To prepare couscous:
1. Place water in a sauce pan and add in salt. Bring to boil.  Add in couscous   into boiling water and cover with a lid.
2. Remove from heat, rest for 15 minutes.Stir and loosen the couscous. Served hot.
