    蛇瓜的嫩瓜含丰富的碳水化合物、维生素和矿物质,肉质松软,有一种轻微的臭味,但是煮熟以后则变为香味,微甘甜。蛇瓜的嫩果和嫩茎叶可炒食、做汤,清香可口,别具风味。

    Step 1

    将蛇瓜横切成两片去籽,切成1.5公分块状。萝卜和马铃薯也一样切成块状。Slice snake gourd into 2 & remove the fibrous centre. Cut into 1.5cm cubes. Do the same for the carrots & potatoes.

    Step 2

    取一锅煮材料A,小火慢煮直绿豆变熟,必要时可以加水。继续加入萝卜和马铃薯煮至软。同样的,可以适度的添加更多的水。In a pot, bring ingredients A to a boil, lower heat and cook until beans are tender, adding more water if necessary. Add the carrots & potatoes and continue cooking till potatoes become tender. Add more water if needed.

    Step 3

    用另一锅热油爆香材料B。好了之后拌入煮绿豆的锅内,并加入椰浆。Heat oil, sauté ingredients B until onions are browned. Pour this mixture into the beans pot and add coconut milk.

    Step 4

    大火煮沸后,加盐调味,最后撒上香菜叶。Bring to a quick boil, adjust salt to taste and top with coriander leaves.

    Step 5

    趁热搭配米饭一同享用。Serve with rice.
