    Step 1

    苦瓜剖开去籽,然后切薄片,搽盐后冲洗滴干。Halve the bittergourd and remove the seeds.Cut into thin slices.Rub a little salt into the bittergourd. Rinse and drain well.

    Step 2

    把汤底材料放入深锅煮至滚,然后放入蘑菇、苦瓜、姜及鱼丸,煮2分钟。Put stock ingredients in a deep pot and bring to the boil.Put in mushrooms, bittergourd, ginger and fish balls.Let it boil for 2 minutes.

    Step 3

    猪肉片加入调味料拌匀,待汤滚后投入,煮1分钟即可,然后倒入蛋白,以筷子搅散即可上桌。Marinate pork slices with its seasoning. Once soup has boiled,drop the pork slices into the soup and cook for a minute.Pour in egg white and give a swirl with a pair of chopsticks on the egg white.Dish out soup and serve.
