Directions
一定要先炒花椒,再炒辣椒,因为花椒出香味较慢,先炒才不至于花椒不香,而辣椒却糊了。
鸡肉用少许盐、胡椒粉及鸡精粉腌30分钟备用。Marinate the chicken with some salt, pepper and chicken granule powder for 30 minutes.
将鸡肉沾了鸡蛋再沾炸粉,放入热油中炸成金黄色,捞起滴干油备用。Soaked chicken with egg , and then coating with flour mixed, fried in hot oil until golden, set aside.
在另一个镬里爆香花生、四川花椒粒及辣椒干至香。Prepare another pan for deep fry peanuts, dried chilies and pepper corns until aromatic, throw in the fried chicken cutlets.
加入鸡肉拌炒均匀,即可上桌。Stir fried until well mixed. Served Hot.
