辣椒炒虾 Chilli Prawns

材料:

大虾500克(洗净连壳剪开背后以1茶匙盐和糖腌妥)

炸油适量

Ingredients:

500g big prawns (clean and marinate with 1 tsp of salt and sugar)

some cooking oil

研磨香料:

辣椒干15条(浸泡) 、指天椒10条、葱头9粒、蓝姜3公分长、香茅2枝

Grounded spices:

15 dry chilli (soaked), 10 chilli padi, 9 shallot, 3 cm Galangal, 2 lemon grass

调味料:

白糖1-2汤匙、番茄酱2汤匙、盐适量、清水2-3汤匙

Seasoning:

1-2 tbsp sugar, 2 tbsp tomatoes paste, some salt, 2-3 tbsp water

做法:

1. 起锅热油,把大虾炸至金黄色,滴干油。

2. 留5-6汤匙油在锅里,把研磨香料爆香。

3. 加入调味料和炸虾,炒均匀。

4. 盛出配白饭。

Method:

  1. Heat oil in wok, fry prawns until golden brown, drain.
  2. Keep 5-6 tbsp oil in wok, saute grounded spices till aromatic.
  3. Toss inseasoning and prawns, stir fry well.
  4. Serve with white rice.
