    Step 1

    把鳝鱼洗净后,涂盐,蒸10分钟,然后离锅冷却5-10分钟。Rinse eel,rub with salt and steam for 10 minutes. Remove,cool for 5-10 minutes.

    Step 2

    把鳝鱼沾薯粉,放入热油中炸至脆。Toss eel pieces with tapioca flour. Deep-fry in hot oil until crispy. Dish out.

    Step 3

    起锅热麻油,放入花椒、咖哩叶、辣椒干及姜,炒至香。Heat sesame oil and saute Szechuan pepper, curry leaves, dried chillies and ginger until fragrant.

    Step 4

    加入调味料,然后下鳝鱼,大火炒至香。Add in seasoning followed by eel pieces. Toss and fry over high heat until fragrant.

    Step 5

    加入青葱和大葱,炒均即可上桌。Add in spring onion and onion. Stir-fry briskly to combine.
