辣薯片 Spicy Potatoes Crackers

【材料】
马铃薯500克(去皮)、白糖60克、盐1茶匙
【研磨香料】
小葱头 120克、蒜头2瓣、辣椒干15条 (浸泡热水)
【做法】
1. 用电动搅拌器把所有研磨香料研磨至细。(图1)
2. 用切片器把去皮马铃薯切薄片。
3. 热足够的油,以中火把马铃薯分批炸至金黄色,分批翻炸,在纸巾上吸干油。(图2)
4. 留约5汤匙油在锅里,把研磨香料爆香。(图3-4)
5. 加入糖和盐调味,然后把马铃薯片回锅,搅拌至混合均匀。(图5-8)
6. 盛出马铃薯片,待冷却后才装罐。

【Ingredients】
500g potatoes(skinned), 60g sugar, 1 tsp salt
【Ground Spice paste】
120 g shallots, 2 cloves garlic, 15 stalks dried chilies(soaked),
【Method】
1. Grind spice paste ingredients in electric blender until fine.(pic 1)
2. Using a mandolin, slice the peeled potatoes, thinly.
3. Heat sufficient oil in a wok, to medium heat, deep fry the sliced
potatoes in batches, drain potato chips on paper towels. (pic 2)
4. Leave about 5 tbsp oil in the wok, sauté the spice paste until
fragrant. (pic 3-4)
5. Add sugar and salt to taste, and return the crispy potato chips into
the spice paste, stir until coated. (pic 5-8)
6. Remove and leave to cool before storing in airtight containers.
