    粉丝又称冬粉,是中国的传统特产之一,也是早期人们保存杂粮的加工主食。冬粉由各种淀粉做成,常见的制作原料有绿豆、蚕豆、豌豆、马铃薯、树薯、玉米等杂粮,其中又以绿豆制作最佳。

    Step 1

    把粉丝煎长段,放入沸水浸软,捞起备用。Cut glass noodle in section, blanch in boiling water till soft, drain and set aside.

    Step 2

    烧热少许油,放入香菇炒香,加入粉丝、调味料和清水,煮至滚。Heat some oil in wok, saute mushroom till fragrant, toss in glass noodle, seasoning and water, bring to boil.

    Step 3

    加入中芹及辣椒拌匀,盛起加入花生粒即可。Add in chopped wild celery, chilli, stir well, spread with some nuts before serve.

    Step 4

    辣椒油做法:辣椒干8条切段、花椒10粒、红辣椒2条(切段)、清油100克,一起煮约10分钟即可。To prepare chilli oil: 8 dried chilli (cut section), 10 Sichuan peppercorn, 2 red chillies (cut in sections), 100g oil. Cook all ingrediets for 10 minutes, done.
