    Step 1

    起锅热油,慢火炒银鱼至酥脆后盛出。Heat oil in a wok over low heat and add whitebait. Stir-fry over low heat until crispy. Dish out and set aside.

    加入鸡蛋炒香。Add in beaten eggs and stir-fry till fragrant.

    加入白饭和调味料,大火炒均,边炒边撒入少许清水以防太干。Put in cooked rice and add in seasoning. Toss and fry quickly over high heat until well combined. While frying the rice,sprinkle in a little water to prevent rice from getting too dry.

    加入指天椒和银鱼,大火炒均即可盛出。Add bird’s eye chillies and prefried whitebait. Toss briskly over high heat till heated through and rice is fragrant.
