锁匙姜东炎鱼片 Tom Yam Fish Filiet

材料:
素鱼片80克(炸至金黄色)、簿荷叶适量、番茄1粒(切块)、长豆100克、姜花1朵(切开边)(图1)
香料(切细捣烂)
锁匙姜15克、黄姜1寸、香茅3根、蓝姜30克、红辣椒2支、辣椒粉1??
调味料:
豆酱2茶匙、东炎酱1 1/2汤匙、酸柑1-2粒、味精1/4茶匙、糖1 1/2汤匙、盐1/4茶匙、水1饭碗
做法:
1.烧热适量的油,爆香料。加入长豆炒至熟,再加入水和姜花煮片刻。(图2)
2.加入番茄,素鱼片和调味料煮至汁一点浓,即可上碟。(图3)
3.加入香花菜即可享用。
要点:
*锁匙姜是泰国一种香料,有祛风的功能。
*锁匙姜只可在马来档或印度档购买到。

INGREDIENTS:
80g mock fish fillet (deep fry), some coriander leave, 1 tomato (dice), 100g snake long bean, 1 bunga kantan (halve). (pic 1)

HERBS (FINELY POUNDED):
15g SHA JIANG, 3 cm turmeric, 3 stalks serai, 30g galangang, 2 red chilli, 1 tbsp chilli powder

SEASONING:
2 tsp soy bean paste, 1 1/2 tbsp Tom Yam paste, 1-2 lime, 1/4 tsp MSG, 1 1/2 tbsp sugar, 1/4 tsp salt, 1 bowl water

METHOD:
1.Heat some oil in wok, saute the herbs until fragrant, add in long bean and stir-fry until cooked, and then pour in water and bunga kiantan and boil for a short while. (pic 2)
2.Add in tomato, mock fish fillet and seasonings, boil.
3.Spread coriander on top and serve.

Tips
*SHA JIANG is a Thai’s herbs, has the effect of removing wind.
*SHA JIANG may be obtaining from indian or Malay stores.
