韩国炸鸡翼 Korean Fried Chicken Wings

【材料】
鸡翼10个(洗净滴干,以1⁄2茶匙盐腌妥)、生粉1⁄2碗、烤芝麻1茶匙
【酱汁】
食油2汤匙、蒜头3瓣(剁碎)、姜茸2茶匙、麻油1⁄2茶匙、韩国辣椒酱3汤匙、白糖4-5汤匙、酱油1汤匙、辣椒粉1茶匙
【做法】
1. 将腌过的鸡翼沾满生粉。(图1-2)
2. 起锅热油,把鸡翼炸至熟,盛出。(图3)
3. 另外把全部酱汁料(姜和蒜除外)捞匀。(图4-5)
4. 起锅热油,爆香蒜茸和姜茸,加入酱汁混合料炒匀,加入炸鸡翼兜均。(图6-7)
5. 离锅前撒入芝麻即可。

【Ingredients】
10 pcs chicken wings (washed and drained; marinated with 1⁄2 tsp salt ),1⁄2 cup tapioca flour for dusting, 1 tsp toasted sesame seeds for dusting
【Sauce】
2 tbsps cooking oil, 3 cloves garlic(chopped), 2 tsps chopped ginger, 1⁄2 tsp sesame oil, 3 tbsps spicy Korean chilly paste, 4-5 tbsps sugar, 1 tbsp
light soya sauce, 1 tsp chili flakes
【Method】
1. Dust marinated chicken wings with sufficient tapioca flour.(pic 1-2)
2. Heat sufficient cooking oil in a pot, deep fry the wings, remove.(pic 3)
3. Mix all the sauce ingredients (except for garlic and ginger).(pic 4-5)
4. In a wok, sauté the garlic and ginger until fragrant. Add the sauce ingredients, fry well and toss in crispy wings back into the wok.(pic 6-7)
5. Remove, sprinkle with toasted sesame seeds and serve.
