    Step 1

    把鸡肉切大方块,然后以腌料腌至少30分钟。Cut chicken into big cubes.Season with marinade for at least 30 minutes.

    Step 2

    把鸡肉沾薯粉,以热油炸至金黄色和酥脆。Coat chicken with tapioca flour and deep-fry in hot oil until golden and crispy.Remove and put aside.

    Step 3

    另外起锅热牛油,把辣椒干和咖哩叶爆香和盛出。Heat butter in a wok.Fry dried chilles and curry leaves until fragrant.Dish out.

    Step 4

    加入淡奶和调味料,加入炸鸡肉,炒至沾至均匀,然后把辣椒干和咖哩叶回锅拌均即可。Add evaporated milk and seasoning.Put back the chicken and stir-fry briefly until chicken is well coated with the butter sauce.Return fried curry leaves and dried chillies to mix.
