    Directions

    Step 1

    用腌料腌猪丁25-30分钟。Season pork cubes with marinade for 25-30 minutes.

    Step 2

    把猪丁沾生粉,然后大火炸1-2分钟,然后以纸巾吸干油。Toss marinated pork cubes in cornstarch then deep-fry in hot oil over high heat for 1-2 minutes. Dish out and drain well on kitchen pepper towels.

    Step 3

    把面糊混合后放入猪丁;沾裹面糊后再炸第二次至酥脆。Mix batter together then put in prefried pork fillet cubes to mix. Remove and deep-fry in hot oil for a second time until crispy.

    Step 4

    用剩余的热油把咖哩叶和辣椒干炸香后盛出。Add in curry leaves and dried chilies in the remaining hot oil and fry until crispy and fragrant. Dish out and put aside.

    把炸猪丁和炸咖哩叶及辣椒干混合均匀。Combine the crispy pork cubes with the dried chilies and curry leaves.

    热锅,把椒盐混合料炒香,然后加入猪丁,炒一会,跟着淋上1汤匙热油,迅速拌均即可。Heat wok and fry fragrant pepper salt. Add in the deep-fried pork fillet mixture.Toss and at the same time add 1 tablespoon hot oil. Toss quickly until well combined and fragrant.
