起锅热油,把菜籽炒至爆跳后加入咖哩叶和研磨过的葱头和蒜,炒至香。Heat oil in a wok,sauté mustard seeds until they start to pop. Add in curry leaves and blended shallots and garlic. Fry until fragrant.
加入辣椒泥、黃姜粉和咖哩粉炒至香。Add in chilli boh mixture,turmeric powder and curry powder. Stir-fry till aromatic.
加入白醋、酸柑汁、盐及黄糖,炒1-2分钟后盛出。Mix in vinegar,lime juice,salt and brown sugar. Continue to fry for 1-2 minutes or until well mixed. Dish out into a stainless steel pot and leave to cool.
把其他材料A和B加入酱料里,搅拌均匀,让它们腌一阵子即可。Add in ingredients A and B. Toss and mix well to combine. Close the pot and leave to pickle.
