    Step 1

    将鱼洗净,切双飞,沥干水份. Wash fish and cut into butterfly shape

    Step 2

    沥干水份用大火蒸8分钟取出倒去汤汁,盛盘备用。 steam in high heat for 8 minutes, pour away steamed sauce.

    Step 3

    茄子洗净后,切段过油;捞起沥干油备用。 Cut eggplant into pieces and then blanch in hot oil until cooked, drain

    将肉碎及虾肉用少许生抽腌制片刻备用。 Marinate minced meat and prawn with some soy sauce.

    锅子热上油,爆香蒜茸和姜茸;把肉碎和虾肉以大火炒 香,加入调味料煮沸。 Heat oil in wok, sauté chopped garlic and ginger until fragrant, toss in minced meat and prawn and stir-fry with high heat. Add in seasonings and bring to boil

    把茄子回锅以大火快炒兜匀调好味捞起排在蒸好的鱼上即 可。 Add in eggplant and stir-fry quickly, pour it over steamed fish to serve.
