鸿运甜菜根汤Beetroot Soup

【材料】
A:甜菜根200克、马铃薯120克、西芹30克、包菜50克、水650克
B:白玉菇100克、葵花油1汤匙、鲜奶80毫升

【调味料】
幼盐1⁄2茶匙、香菇粉1⁄2茶匙、胡椒粉1⁄4茶匙

【装饰】
西洋芫茜碎少许

【做法】
1.甜菜根及马铃薯去皮,洗干净切小块,先蒸至软熟,约20分钟。(图1-2)
2.烧热少许油,放入包菜、西芹炒香,盛起待用。(图3)
3.把全部材料放入搅拌机中,加入水一起研磨至细滑。(图4-5)
4.把蔬菜泥倒回锅中,加入材料B及调味料一起煮滚即可上桌,用西洋芫茜碎装饰。(图6-8)

【Ingredients】
A:200g beetroot, 120g potato, 30g celery (cut sections), 50g cabbage(cut pieces), 650g water
B:100g white button mushroom, 1 tbsp sun flower seed oil, 80g milk

【Seasoning】
1⁄2 tsp salt, 1⁄2 tsp mushroom granule, 1⁄4 tsp pepper

【Garnishing】
some chopped parsley

【Method】
1.Peel and wash beetroot and potato, cut into small pieces; and then steam for about 20 minutes or until soften. (pic 1-2)
2.Heat some oil in wok, add in cabbage and celery and stir-fry until fragrant, dish out. (pic 3)
3.Put all ingredients in blender and blend with water into puree. (pic 4-5)
4.Return the puree to wok, boil with ingredients B and seasoning; once boiled, off heat, sprinkle parsley on top and serve. (pic 6-8)
