凉瓜猴菇素香片煲Braised Bitter Gourd with Monkey head mushroom pot

【材料】
凉瓜250克、猴头菇100克、红萝卜50克、素梅香咸鱼50克 、姜5片 、芫茜少许

【调味料】
生抽1汤匙、黄糖1⁄4茶匙 、胡椒粉1⁄8茶匙 、清水1⁄2碗、粟米粉1⁄2茶匙

【做法】
1.将所有调味料混合备用。
2.凉瓜切开,将籽挖除切小块,红萝卜切片,用开水川烫过,捞出,沥干水。
3.素梅香咸鱼切小块,用热油炸香。
4.热1汤匙油,放入姜片、凉瓜、猴头菇及调味料拌炒至汁浓稠,加入素梅香咸鱼及红萝卜拌煮匀即可

【Ingredients】
250g bitter gourd, 100g monkey head mushroom, 50g carrot, 5 slices ginger, some coriander

【Seasoning】
1 tbsp soy sauce, 1⁄4 tsp brown sugar, 1⁄8 tsp pepper, 1⁄2 bowl water, 1⁄2 tsp corn flour

【Method】
1.In a bowl mix all the seasoning and set aside.
2.Halve and seeded the bitter gourd, cut into small pieces; cut carrot into florets and then blanch in boiling water and drain.
3.Cut mock salted fish into small pieces and deep fry until fragrant, set aside.
4.Heat 1 tbsp oil in wok, add in ginger, bitter gourd, monkey head mushroom and seasoning, cook until gravy thicken, toss in mock salted fish and carrot, done.
