煲仔鸭Clay Pot Duck

【材料】
鸭半只、姜20g、八角5粒、桂皮20g、小茴香1茶匙、鸡蛋1粒

【调味料】
酱油3汤匙、黑酱油1⁄2汤 匙 、糖1⁄2汤匙 、鸡精粉1茶匙

【做法】
1.将鸭肉洗净切成块,焯水沥干用蛋清腌制10分钟备用。(图1)
2.热上油锅,小火将姜片,八角、桂皮和小茴香炒香。(图2-3)
3.把鸭肉投下锅用大火煸香至微焦为止。
4.加入盖过材料的水、酱油、黑酱油和糖用大火焖煮30分钟。加入鸡精粉捞匀,继续焖煮至肉软、收汁为止 。(图4)
5.把煮好的鸭肉移入瓦煲内,放葱粒装饰即可上桌享用。

【Ingredients】
1⁄2 duck, 20g ginger, 5 pcs star anise, 20g cinnamon, 1 tsp cumin, 1 egg

【Seasonings】
3 tbsp soy sauce, 1⁄2 tbsp dark soy sauce, 1⁄2 tbsp sugar, 1 tsp chicken powder

【Method】
1.Wash duck and cut into pieces, blanch in boiling water and then marinate with egg white for 10 minutes.(pic 1)
2.Heat oil in wok, sauté ginger, star anise, cinnamon and cumin until fragrant.(pic 2-3)
3.Add in duck and stir-fry in high heat until brown.
4.Add in seasoning and water enough to cover the contents and boil in high heat for 30 minutes, then turn to low heat and simmer until gravy reduced. Add in chicken powder. (pic 4)
5.Shift the duck meat to clay pot, garnish with chopped spring onion, serve.
