肉片酥Crispy Meat Slices

【材料】
瘦肉500克、马铃薯三粒、蒜头1粒(剁碎)、小葱头100克(剁碎)、鸡蛋1粒(打散)、高汤1杯

【腌料】
盐1⁄2茶匙、酱油1⁄2汤匙、糖1⁄2茶匙、胡椒粉适量

【做法】
1.将马铃薯放入热水中煮熟后,去皮切片,放入热油中炸香备用。
2.瘦肉切约0.6cm厚度,以刀轻剁肉,以腌料腌一小时。
3.倒入鸡蛋液与肉搅拌,把每片肉沾上薯粉下油锅炸至酥脆。
4.爆香蒜米,放入马玲薯片拌炒,倒入高汤,焖煮20分钟至软身后,加盐和胡椒粉调味,然后淋在瘦肉酥上。

【Ingredients】
500g lean meat, 3 potatoes (sliced), 1 whole garlic (chopped), 100g shallot (chopped), 1 egg (beaten), 1 cup stock

【Seasoning】
1⁄2 tsp salt, 1⁄2 tbsp soy sauce, 1⁄2tsp sugar, dash pepper to taste

【Method】
1.Blanch potaoes in boiling water till soft, slices and deep fry in hot oil.
2.Slice lean meat into 0.6cm thick, loosen with the spine of knife, and then marinate with dash of salt, soy sauce, sugar and pepper for 1 hour.
3.Mix the egg sauce with meat, and then coat with corn flour and deep fry until crispy.
4.Sauté garlic until fragrant, toss in potato slices, stir-fry, pour in stock and simmer for 20 minutes until soften, add salt and pepper to taste, pour it over the crispy meat to serve.
