黄豆酱炸鸡FRIED CHICKEN WITH BAKED BEANS SAUCE

材料:
鸡全腿600克(去骨切丁)、栗米粉2汤匙、麻油2汤匙、辣椒干8条(切段)、大葱1粒(切瓣)、红灯笼椒1/2粒(切丁)、红萝卜80克(切片)、甜豆10个(切半)、罐头黄豆1罐(300克)

腌料A:
胡椒粉1/4茶匙、酱油1汤匙、白糖1/4茶匙、麻油1茶匙

调味料B:
番茄酱2汤匙、白糖1/2茶匙、盐1/4茶匙、黑胡椒粉1/4茶匙、鸡粉1/2茶匙、清水150毫升

做法:
1.用腌料A腌鸡肉数小时或收冰箱留隔夜,然后加入栗米粉,以热油炸熟。
2.热麻油,把辣椒干和大葱爆香,然后加入红萝卜和甜豆。
3.加入罐头黄豆和调味料B,快火煮滚后盛出装碟,然后上铺炸鸡肉,撒上青葱粒即可上桌。

Ingredients

600g chicken whole leg (deboned and cubed)
2 tbsp cornflour
2 tbsp sesame oil
8 dried chillies, cut into sections
1 onion (cut into wedges)
1/2 red capsicum (cubed)
80g carrot (cut into slices)
10 pieces sweet peas (halved)
1 can (300g) Baked Beans in Tomato Sauce

Marinade (A)
1/4 tsp pepper
1 tbsp Light Soy Sauce
1/4tsp sugar
1 tsp sesame oil

Seasoning (B)
2 tbsp Tomato Sauce
1/2 tsp sugar
1/4 tsp salt
1/4 tsp ground black pepper or to taste
1/2 tsp chicken stock powder
150ml water

Garnishing
2 stalks spring onion, cut into sections

Method
(1)Season chicken with marinade (A) for several hours or preferably overnight in the refrigerator. Add cornflour to mix then deep-fry in hot oil until chicken is cooked through. Remove and leave aside.
(2)Heat sesame oil and fry dried chillies and onion until fragrant. Add carrot and sweet peas.
(3)Stir in Baked Beans and seasoning (B). Cook to a quick boil. Dish out and top up with prefried chicken. Sprinkle over with spring onion.
