黄金蟹肉饼Golden Crab patties

【材料】
A:螃蟹肉100克、面包糠100克、马铃薯泥400克、鸡蛋1 颗、洋葱50克(切粒)、芫荽5克(切碎)、玉蜀黍粉50克
B:美乃滋30克、盐适量、黑胡椒适量
C:面包糠1碗、鸡蛋3颗、少许玉蜀黍粉

【做法】
1.将材料A进行混合,接着加入材料B 调味,完成后将食材放入冰箱30分钟(冷冻后方便拿捏)。
2.在手上撒些面粉,把适量冷冻蟹肉泥揉成球状再将上下按平,形成饼状。
3.接着准备鸡蛋浆、玉蜀黍粉和面包糠,按照顺序将螃蟹球裹上面包糠。
4.起锅热油,以中火炸螃蟹肉饼至金黄色浮起就可以上碟。
5.上碟后以额外美乃滋点缀调味。

【Ingredients】
A:100g crab meat, 100g breadcrumb, 400g mashed potato, 1 egg, 50g chopped onion, 5g chopped coriander, 50g corn flour
B:30g mayonnaise, dash of salt and black pepper corn
C:1 bowl breadcrumb, 3 eggs, corn flour

【Method】
1.Mixes all ingredients A and then season with ingredients B, keep in fridge for 30 minutes (freeze to make handling easier).
2.Floss hand with flour and take some cold crab meat mixture to shape into ball and then flatten with palm.
3.Prepare egg sauce, corn flour and breadcrumb, dip in crab patties in this sequence for coating.
4.Heat oil in wok with medium heat, deep fry the crab patties until golden brown.
5.Serve with extra mayonnaise.
