    Step 1

    用小火加热油,放入黑芥末籽,炸至其爆裂。加入干辣椒、洋葱、咖喱叶、孜然籽和印度混合香料,炒至香味四溢。然后加入沥干的扁豆,翻炒 1-2 分钟。Heat oil over low heat and fry mustard seeds till they pop. Add dried chilies, onion, curry leaves, cumin seeds, garam masala and fry till fragrant. Add drained dhal and fry for 1 – 2 minutes.

    Step 2

    加入一半的椰丝,翻炒 30 秒钟。再加入四季豆、姜黄粉,调入适量盐和糖。翻炒至四季豆变色。Add half the coconut and fry for 30 seconds. Add beans, turmeric powder, salt and sugar to taste. Stir fry till beans change colour.

    Step 3

    加入剩余的椰丝和水,煮至微沸,继续煮至四季豆变软。炒至大部分液体蒸发。如果需要,可以调整调味。趁热搭配米饭食用。Add remaining coconut and water. Bring to a simmer and cook till beans are tender. Stir fry until most of the liquid has evaporated. Season if required and serve hot with rice.
