意式脆饼Italian Biscuits

材料:
(A)蛋白5粒、塔塔粉1/2茶匙、糖150克
(B)低筋面粉150克、粘米粉40克
(C)开心果60克、核桃60克、杏仁60克、姜糖40克(图1)

做法:
1.将A料以中速打发。(图2)
2.加入筛过的B料以慢速拌匀。(图3)
3.加入烤过的果仁拌匀。(图4)
4.装入涂油的8寸烤模以170°烤30-40分钟。(图5-6)
5.放入冰箱冷冻过夜至硬。(图7)
6.取出切成薄片,再以150°烤20分钟即可。(图8)

Ingredients:
(A) 5nos egg white, 1/2 tsp cream of Tartar
(B) 150g sugar, 150g superfine, 40g rice flour
(C) 60g pistachio, 60g walnut, 60g almond, 40g glaze ginger(pic 1)

Method:
1.Cream ingredients A till stiff.(pic 2)
2.Add in sifted ingredients B and mix well.(pic 3)
3.Add in all the toasted nuts.(pic 4)
4.Pour into 8 inches greased tin and bake at 170° for 30-40 mins.(pic 5-6)
5.Keep in the freezer overnight.(pic 7)
6.Cut it into thin slices, bake at 150° for 20 mins.(pic 8)
