鲜虾红咖喱Prawn Red Curry

【材料】
A:红辣椒30克、洋葱1颗、红葱头10颗、蒜头10颗
B:红辣椒泥100克、鱼咖喱粉30克、黄姜粉10克、红辣椒粉10克、姜30克、八角5粒、桂皮4公分长、咖喱叶少许、油20毫升、清水200毫升
C:明虾500克、矮瓜2条、羊角豆10条、
D:盐适量、糖适量、椰奶100毫升

【做法】
1.将材料A加些水用搅拌器研磨至细备用。
2.起锅热油,加入研磨料爆香,再加入材料B,炒至材料熟透开始出现红油。
3.材料C 先用热油油炸至熟,然后加入红咖哩里煮,并加入材料D,滚多5分钟就可以起锅。

【Ingredients】
A:30g red chili, 1 onion, 10 shallots, 10 pips garlic
B:100g chili boh, 30g fish curry powder, 10g turmeric powder, 10g chili powder, 30g ginger, 5 pcs star anise, 4 cm cinnamon, some curry leaves, 20ml oil, 200ml water
C:500g prawn, 2 eggplant, 10 lady fingers
D:Dash of salt and sugar, 100ml Santan

【Method】
1.Blend ingredients A with some water in blender until fine.
2.Heat oil in wok, saute ingredients A till fragrant, add in ingredients B, stir-fry until red oil emerged.
3.Deep fry ingredients C in hot oil until cooked, and then add into the red curry mixture, also add in ingredients D and bring to boil for 5 minutes, done.
