甜酒酿,也称醪糟,一般是以白糯米,也有黑/紫糯米的,蒸熟后晾凉,加入酒麴,经过发酵熟成,即可直接食用。它的味道直接,是带着酒香的甜米味,是一种很天然的爽净甘醇。它的酒精含量低,富含酵母菌及各种酶、微量元素与蛋白质、胺基酸、维生素具有相互协调和补充作用,可提高其营养价值及保健功效,因此7岁以上的小朋友都可以适量享用。甜酒酿的吃法简单且美味,小时候长辈常给做的滋补品如酒酿鸡蛋、酒酿汤圆,都是常家常做法,一般只需将食材煮熟,加入一瓢甜酒酿就可以开吃了。夏日炎炎,甜酒酿也可以是冰冰凉凉、酸酸甜甜的,补充营养的同时又可以消暑解腻,吃起来,有愉悦的感觉。

    Step 1

    蕃薯去皮、切块,泡水去淀粉后,放入1公升纯净水汤锅内煮15分钟;Peel and cut the sweet potatoes into chunks. Soak them in water to remove excess starch, then add them to a pot with 1 liter of purified water. Boil for 15 minutes.

    Step 2

    加入小汤圆,中火将汤圆煮至浮起后,加入甜酒酿和冰糖,煮滚;Add the glutinous rice balls to the pot. Once they float to the surface, add the sweet wine fermented rice and rock sugar. Bring to a boil.

    最后加入枸杞和淀粉水勾芡,拌匀,盖上盖子焖5分钟,即可熄火;Lastly, add the goji berries and cornstarch slurry to thicken the soup. Stir well, cover, and let it simmer for 5 minutes.

    Step 4

    可趁热或随喜加冰享用,适量增添鲜甜酒酿和桂花,则可添风味。Serve hot, or chill and enjoy with ice cubes if preferred. For enhanced flavor, add extra sweet wine fermented rice and osmanthus flowers to taste.
