花生糊黑芝麻汤圆Tung yuen filled with Black sesame served with peanut

【粉团材料】
糯米粉170克、普通面粉30克、 滚水150毫升

【黑芝麻馅料】
黑芝麻80克(炒香后研磨至细滑)、糖粉70克、牛油40克、盐适量

【花生糊材料】
去衣花生350克(以油炒透)、清水1000毫升、白糖80克、椰浆头50毫升、淡奶100毫升、盐1⁄2茶匙、薯粉1⁄2 汤匙+3汤匙清水

【馅料做法】
在碗中把黑芝麻和其他材料混合,再搓成5-6克小丸备用。

【花生糊做法】
1.把炒花生和水放入研磨器研磨至细。(图1)
2.把花生泥过滤入锅里。加入糖,煮至滚,边煮边搅拌。(图2)
3.加入椰浆和淡奶后,一滚熄火。以薯粉水勾芡,即可加入汤圆。

【汤圆做法】
1.把糯米粉及面粉混合。
2.慢慢倒入热水,以杓子把粉料搓成面团。
3.把面团分成10-12克等份,然后包入黑芝麻馅料,搓成汤圆。(图3)
4.把黑芝麻汤圆放入滚水中煮至浮起,然后盛入花生糊中即可。 (图4)

【Dough Ingredients】
170 g glutinous rice flour, 30 g plain flour, 150 ml hot water

【Sesame filling】
80g black sesame seeds(toasted & finely grind), 70g icing sugar, 40 g butter, pinch of salt

【Peanut cream ‘fah sang woo’】
350g ground nuts without skin(fried in oil), 1 litre water, 80g sugar, 50 ml thick coconut milk, 100ml evaporated milk, 1⁄2 tsp salt, 1⁄2 tbsp tapioca flour + 3 tbsps water

【To make sesame filling】
In a bowl combine ground sesame with icing sugar, salt, butter until it binds together. Shape into small balls about 5-6g. Set aside.

【To prepare peanut broth】
1. Place the fragrant fried peanuts into an electric blender. Add some water & finely grind peanuts.(pic 1)
2. Sieve the pureed peanut into a pot. Add sugar & bring peanut cream to a boil, stirring continuously.(pic 2)
3. Add in coconut milk and milks & turn off heat once peanut cream comes to a second boil. Thicken with tapioca solution, set aside.

【To prepare the dough】
1. Place the glutinous rice flour, plain flour in a mixing bowl.
2. Gradually add hot water & knead into a dough with the help of a spatula.
3. Divide the dough into 10-12g each; flatten and wrap with a ball of black sesame filling and shape into round. (pic 3)
4. Drop the filled dough into a pot of boiling water & cook until the dough afloats. Remove with a slotted spoon & place into the peanut cream, serve immediately. (pic 4)
