甜酱鸡丁 Sweet Chicken Cubes

┃材料┃
鸡胸肉600克(切丁)、黄瓜1条(切丁)
┃腌料┃
鸡蛋1粒、盐10克、绍兴酒10克、薯粉10克
┃调味料┃
甜酱50克、老抽10克、白糖30克、辣油10克

┃做法┃
将切好的鸡丁放入大碗里,加盐、绍兴酒、少许的水和鸡蛋,搅拌均匀,最后才加薯粉再继续搅拌均匀过后放一旁腌制10分钟。(图1)
热锅下油烧至七成热,放入鸡丁滑散后盛出备用,然后用剩下的油,把黄瓜过油备用。(图2-3)
锅下油烧热,放入甜酱炒香后加入清水?杯,再加入老抽、白糖、辣油,炒大约20秒,最后再放入鸡丁和黄瓜炒均匀即可。(图4-5)

┃INGREDIENT┃
600g chicken breast (cut cube), 1 cucumber (cut cube)
┃CONDIMENTS┃
1 egg, 10g salt, 10ml Chinese cooking wine, 10g tapioca flour
┃SEASONING┃
50g sweet soy bean paste, 10g salt, 10g soy sauce, 30g sugar, 10g chili oil

┃METHOD┃
Marinate chicken cubes with salt, Chinese cooking wine, some water and egg; and then mix in tapioca flour and stand for 10 minutes. (pic 1)
Heat oil in wok, add in chicken cubes to blanch and dish out; and then blanch cucumber briefly and dish out. (pic 2-3)
Heat oil in a clean wok, sauté sweet soy bean paste until fragrant, add in ? cup of water, soy sauce, sugar and chili oil, stir-fry for about 20 seconds, toss in chicken and cucumber cubes, dish out.(pic 4-5)
