Directions
把马铃薯洗刷干净,然后以叉插孔。 wash and scrub the potato, pierce hole by using fork.
用盐和胡椒粉搽马铃薯,然后以铝箔包裹。放入预热至180°C的烤炉里烤40-45分钟。 rub potato with salt and pepper, wrap with aluminium foil. baked in oven at 180°C for 40-*45 minutes.
把牛肉清理干净,去除脂肪后切方块。热少许油,把牛肉炒香后盛出,置放一旁。 Prepare beef by removing all excess fat and cut into cube. Heat a little oil in frying pan and quickly fry till golden brown. Drain beef and keep aside.
锅里加多一些油,把大葱和蒜头炒至金黄色。 Add a little more oil to frying pan, add onion and garlic and quickly fry until a light golden colour.
加入辣椒粉,百里香及小茴香,煮3分钟后加入炒牛肉。 Stir in chilli powder, thyme and cumin, cook for further 3 minutes. Return cooked beef into the pan.
加入番茄膏,番茄及调味料,倒入盖过牛肉的高汤。慢火煮至肉软,若太干可加入高汤。拌入腰子豆,再次试味即可。 Add in tomato paste, tomatoes and seasoning and cover with stock. Gently cook by simmering on the stove and cook till beef are tender. Add a little stock or water if the stew is getting dry stir in red beans and correct seasoning.
在马铃薯上面以刀交叉切开,然后挤压开口。 make a cross cut on the potato and press open the top.
填入烩牛肉。 fill up with chilli con carne
再铺上芝士。 topped with mozzarella cheese.
放入烤炉以220°C烤至芝士溶解即可。 gratin in oven at 220°C till cheese is melted. served hot.
